It is believed that the macaron originated in Italy as a thin almond biscuit, to be brought to France as early as 1533 by Catherine di Medici and her team of chefs. Two Carmite nuns, seeking asylum in Nancy during the French Revolution, baked and sold thin macaron biscuits in order to support themselves.
It was not until the 1900's that Pierre Desfontaines, of the famous Laduree patisserie, combined these crisp biscuits with a sweet ganache filling, turning the macaron into more than just a biscuit, with its crisp yet moist almond shell and silky smooth filling. It soon became a favourite to Parisians and visitors to this wonderful city.
